Lemon Feta Orzo Shrimp: A Bright and Flavorful Dish
Ingredients

- 1 cup orzo pasta
- 1 pound large shrimp
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 lemon
- 1/2 teaspoon red pepper flakes
- Salt and pepper
- 1/2 cup feta cheese
- 1/4 cup fresh parsley
- 1/4 cup cherry tomatoes
- 1 tablespoon capers
Instructions
- In a large pot, bring salted water to a boil.
- Add 1 cup of orzo pasta and cook according to package instructions, usually about 8-10 minutes. Stir occasionally to prevent sticking.
- Once cooked, drain the orzo and set aside, reserving a little pasta water for later.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Sauté 3 cloves of minced garlic for about 30 seconds until fragrant.
- Add 1 pound of shrimp to the skillet. Season with salt, pepper, and 1/2 teaspoon of red pepper flakes (if using). Cook for 3-4 minutes or until the shrimp are pink and opaque.
- Stir the cooked orzo into the skillet with the shrimp.
- Add 1/2 cup of crumbled feta cheese, 1/4 cup of chopped parsley, 1/4 cup of halved cherry tomatoes, and 1 tablespoon of capers. Drizzle with the juice of 1 lemon and add the lemon zest. Toss gently to combine all ingredients.
- If the mixture seems dry, add a splash of the reserved pasta water to help create a creamy consistency.
- Serve the Lemon Feta Orzo Shrimp warm, garnished with additional parsley and lemon wedges if desired. Enjoy!
