Ingredients

  • 3/4 cup granulated sugar
  • 1 large egg

  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups lemon curd (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Mix in flour and salt until a soft dough forms.
  4. Scoop dough into muffin cups and press along bottom and sides to form cups.
  5. Bake 12–14 minutes until edges are lightly golden.
  6. While warm, gently press centers if needed to keep cup shape.
  7. Cool completely, then fill with lemon curd.
  8. Garnish with powdered sugar, berries, or lemon zest if desired.
