- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 1/2 cups lemon curd (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Mix in flour and salt until a soft dough forms.
- Scoop dough into muffin cups and press along bottom and sides to form cups.
- Bake 12–14 minutes until edges are lightly golden.
- While warm, gently press centers if needed to keep cup shape.
- Cool completely, then fill with lemon curd.
- Garnish with powdered sugar, berries, or lemon zest if desired.
