Ingredients

  • 2 ⅓ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup light brown sugar firmly packed
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 Tablespoons unsalted butter melted and cooled until no longer hot to the touch
  • 1 14 oz can sweetened condensed milk (do not use evaporated milk)
  • 4 large egg yolks
  • 2 Tablespoons heavy cream
  • ⅛ teaspoon salt
  • ⅔ cup lemon juice fresh preferred

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
  2. Combine the dry crust ingredients in a large bowl – flour, both sugars, salt, and baking powder – whisking until well incorporated.
  3. Pour the melted and cooled butter into the dry mixture and stir with a fork until evenly moistened and a crumbly dough forms.
  4. Transfer about two-thirds of the crumb mixture to your prepared baking dish and firmly press it into an even layer using the bottom of a measuring cup. Bake for 10-12 minutes until the edges just begin to turn golden.
  5. While the crust bakes, make the filling by whisking together the sweetened condensed milk, egg yolks, heavy cream, and salt until smooth. Gradually whisk in the lemon juice.
  6. Pour the lemon filling over the hot crust as soon as it comes out of the oven. Gently sprinkle the remaining crumb mixture evenly over the top.
  7. Return the dish to the oven and bake for an additional 20-25 minutes, until the filling is set and the crumb topping turns a beautiful golden brown.
  8. Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours before cutting.
