Easy Lemon Crinkle Cookies


Ingredients

  • ½ cup butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tablespoons lemon juice
  • 1 ½ tablespoons lemon zest
  • 1 ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Cookie coating:
  • ¼ cup granulated sugar
  • 1 cup powdered sugar

Instructions

  1. Cream the butter and sugar.
  2. In a large mixing bowl, use a hand mixer or stand mixer to beat ½ cup of butter with 1 cup of granulated sugar on medium-high speed for about 2 minutes, until pale and fluffy.
  3. Incorporate the wet ingredients.
  4. Add the egg, extra yolk, 2 tablespoons of lemon juice, 1 ½ tablespoons of lemon zest, and 1 ½ teaspoon of vanilla extract. Mix on high speed for about 1 minute, until fully blended.
  5. Combine the dry ingredients.
  6. In a separate bowl, whisk together 2 cups of flour, ¼ teaspoon salt, and ½ teaspoon baking soda. Gradually add this dry mixture to the wet ingredients, stirring just until combined.
  7. Chill the dough.
  8. Cover the dough securely and refrigerate for at least 1 hour.
  9. Prepare for baking.
  10. Preheat the oven to 325°F and line baking sheets with parchment paper. Place granulated sugar in one bowl and powdered sugar in another.
  11. Shape and coat the dough.
  12. Scoop out portions of dough and roll them into 1-inch balls. Roll each ball in granulated sugar first, then coat generously with powdered sugar. Arrange them on the baking sheets about 2 inches apart.
  13. Bake.
  14. Bake for 12–13 minutes, until edges are firm but centers appear slightly soft. Allow cookies to rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
