Instructions
- Bake the pie crust according to instructions and let it cool completely.
- In a saucepan, whisk sugar, cornstarch, and egg yolks.
- Gradually add lemon juice and mix until smooth.
- Cook over medium heat, stirring constantly until thickened.
- Remove from heat and stir in butter and lemon zest.
- Let the mixture cool slightly.
- Whip the heavy cream until soft peaks form.
- Gently fold whipped cream into the lemon mixture.
- Pour filling into the prepared crust and smooth the top.
- Refrigerate for 3–4 hours until set.
- Add toppings if desired and serve chilled.
