  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar (for crust)
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar (for filling)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • ½ cup freshly squeezed lemon juice
  • ¼ teaspoon salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into a 9×9‑inch baking pan. Bake for 8–10 minutes. Let cool slightly.
  2. In a large bowl, beat cream cheese until smooth. Add ½ cup sugar, eggs, vanilla, lemon zest, lemon juice, and salt. Mix until fully combined and smooth.
  3. Pour cream cheese mixture over crust and spread evenly.
  4. Bake 20–25 minutes, or until the center is mostly set with a slight jiggle.
  5. Cool to room temperature, then chill in the refrigerator for at least 2 hours.
  6. Slice into squares. Dust with powdered sugar before serving, if desired.
