- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar (for crust)
- 8 oz cream cheese, softened
- ½ cup granulated sugar (for filling)
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- ½ cup freshly squeezed lemon juice
- ¼ teaspoon salt
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into a 9×9‑inch baking pan. Bake for 8–10 minutes. Let cool slightly.
- In a large bowl, beat cream cheese until smooth. Add ½ cup sugar, eggs, vanilla, lemon zest, lemon juice, and salt. Mix until fully combined and smooth.
- Pour cream cheese mixture over crust and spread evenly.
- Bake 20–25 minutes, or until the center is mostly set with a slight jiggle.
- Cool to room temperature, then chill in the refrigerator for at least 2 hours.
- Slice into squares. Dust with powdered sugar before serving, if desired.
