Description
Our lemon blueberry cookies are soft, buttery, and packed with fresh lemon flavor and sweet blueberries. They’re easy to make and perfect for spring, summer, or anytime you want a bright, fruity treat.

- 2½ cups all purpose flour
- 1 tsp cornstarch
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 tbsp lemon zest (about 3 lemons)
- 8 ounces unsalted butter (melted)
- 1 large egg (room temperature)
- 1 large egg yolk (room temperature)
- 1 tsp vanilla extract
- 1 cup blueberries (fresh or frozen)
- ¾ cup white chocolate chips (optional)
- ¼ cup granulated sugar (for rolling)
Instructions
- Preheat the oven to 375 F.
- Line two baking sheets with parchment paper.
- Melt the butter and let it cool completely. Put in the refrigerator for 5-7 minutes.
- Add the flour, cornstarch, baking powder, baking soda, and salt to a large bowl. Whisk until well combined. Set aside until needed.
- Add the granulated sugar, brown sugar, and lemon zest to a large bowl. Whisk to combine until they are the consistency of wet sand.
- Add the cooled melted butter and whisk until well combined.
- Add the room-temperature egg, egg yolk, and vanilla extract to the sugars and mix until smooth and well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Add the blueberries and white chocolate chips to the bowl and gently fold them in. You don’t want the blueberries to bleed, but if they do it’s okay.
- Using a #40 cookie scoop (2 tablespoons, 30 ml, or 1 ounce), scoop the lemon blueberry cookie dough into balls.
- Roll the cookies in the granulated sugar and place them on the prepared baking sheets about 3 inches apart.
- Place the sheets on the center rack of the preheated oven and bake for 10-12 minutes or until the edges of the cookies are set and they are a light golden brown.
- Let the cookies cool on the sheets for 3-4 minutes. Then transfer them to a cooling rack to cool completely.
