Description

Ingredients

  • 2½ cups all purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 tbsp lemon zest (about 3 lemons)
  • 8 ounces unsalted butter (melted)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¾ cup white chocolate chips (optional)
  • ¼ cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven to 375 F.
  2. Line two baking sheets with parchment paper.
  3. Melt the butter and let it cool completely. Put in the refrigerator for 5-7 minutes.
  4. Add the flour, cornstarch, baking powder, baking soda, and salt to a large bowl. Whisk until well combined. Set aside until needed.
  5. Add the granulated sugar, brown sugar, and lemon zest to a large bowl. Whisk to combine until they are the consistency of wet sand.
  6. Add the cooled melted butter and whisk until well combined.
  7. Add the room-temperature egg, egg yolk, and vanilla extract to the sugars and mix until smooth and well combined.
  8. Add the dry ingredients to the wet ingredients and mix until just combined.
  9. Add the blueberries and white chocolate chips to the bowl and gently fold them in. You don’t want the blueberries to bleed, but if they do it’s okay.
  10. Using a #40 cookie scoop (2 tablespoons, 30 ml, or 1 ounce), scoop the lemon blueberry cookie dough into balls.
  11. Roll the cookies in the granulated sugar and place them on the prepared baking sheets about 3 inches apart.
  12. Place the sheets on the center rack of the preheated oven and bake for 10-12 minutes or until the edges of the cookies are set and they are a light golden brown.
  13. Let the cookies cool on the sheets for 3-4 minutes. Then transfer them to a cooling rack to cool completely.
