- 1 egg (beaten, for egg wash)

- 8 oz (225g) cream cheese (softened)
- 1/4 cup granulated sugar
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons lemon juice (freshly squeezed)
- 1/2 teaspoon vanilla extract
- Pinch of salt
- For the Topping
- 1 cup fresh blackberries (or frozen, thawed)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
- In a medium bowl, combine the softened cream cheese, granulated sugar, lemon zest, lemon juice, vanilla extract, and a pinch of salt.
- Use a hand mixer or whisk to blend until the mixture is smooth and creamy. Set aside.
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut it into squares (about 4×4 inches).
- Using a sharp knife, score a smaller square inside each pastry square, about 1/2 inch from the edge, being careful not to cut all the way through. This will create a border for the filling.
- Spoon a generous amount of the lemon cream cheese filling into the center of each pastry square, staying within the scored border.
- Top each filled pastry with a few fresh blackberries, gently pressing them into the filling.
- Brush the edges of the pastry with the beaten egg for a golden finish.
- Place the assembled danishes on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool slightly before serving.
