Description

Lemon Blackberry Danish is a delightful pastry filled with creamy lemon cheese and topped with fresh blackberries.

Ingredients

Scale
  • For the Pastry
  • 1 sheet puff pastry (thawed, if frozen)
  • 1 egg (beaten, for egg wash)
  • For the Lemon Cream Cheese Filling
  • 8 oz (225g) cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the Topping
  • 1 cup fresh blackberries (or frozen, thawed)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. In a medium bowl, combine the softened cream cheese, granulated sugar, lemon zest, lemon juice, vanilla extract, and a pinch of salt.
  2. Use a hand mixer or whisk to blend until the mixture is smooth and creamy. Set aside.
  3. Preheat your oven to 400°F (200°C).
  4. On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut it into squares (about 4×4 inches).
  5. Using a sharp knife, score a smaller square inside each pastry square, about 1/2 inch from the edge, being careful not to cut all the way through. This will create a border for the filling.
  6. Spoon a generous amount of the lemon cream cheese filling into the center of each pastry square, staying within the scored border.
  7. Top each filled pastry with a few fresh blackberries, gently pressing them into the filling.
  8. Brush the edges of the pastry with the beaten egg for a golden finish.
  9. Place the assembled danishes on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
  10. Remove from the oven and let cool slightly before serving.

Notes

  • Use fresh blackberries for best flavor.
  • Make sure the cream cheese is softened for easy mixing.
  • Store leftovers in an airtight container in the refrigerator.
