  • 2 cups shredded chicken (store bought or homemade)
  • ¼ cup red onion, finely diced
  • 12 celery stalks, finely diced
  • ¼ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 cup fresh basil, chopped
  • 2 Tbsp lemon juice
  • 1 Tbsp lemon zest
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the chicken: If using homemade shredded chicken, season 1-1½ lbs. of chicken tenders with salt and pepper, bake at 400°F for 15-18 minutes, and shred using two forks. For store-bought chicken, simply shred it and add to a bowl.
  2. Prep the veggies: Finely dice the red onion and celery, and add them to the bowl with the shredded chicken.
  3. Make the dressing: In a small bowl, combine mayonnaise, Greek yogurt, lemon juice, lemon zest, minced garlic, chopped basil, salt, and black pepper. Mix well.
  4. Toss: Pour the dressing over the chicken and vegetables, mixing until well combined. Taste and adjust seasoning as necessary.
  5. Serve: Serve immediately with crackers, in a sandwich, or as a wrap. Alternatively, refrigerate until ready to use.
