Lemon Basil Chicken Salad is a light, refreshing dish that combines shredded chicken with a creamy, zesty lemon basil dressing. Perfect for quick lunches, meal prep, or a satisfying snack.

- 2 cups shredded chicken (store bought or homemade)
- ¼ cup red onion, finely diced
- 1–2 celery stalks, finely diced
- ¼ cup mayonnaise
- ¼ cup plain Greek yogurt
- 1 cup fresh basil, chopped
- 2 Tbsp lemon juice
- 1 Tbsp lemon zest
- 1 garlic clove, minced
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Prepare the chicken: If using homemade shredded chicken, season 1-1½ lbs. of chicken tenders with salt and pepper, bake at 400°F for 15-18 minutes, and shred using two forks. For store-bought chicken, simply shred it and add to a bowl.
- Prep the veggies: Finely dice the red onion and celery, and add them to the bowl with the shredded chicken.
- Make the dressing: In a small bowl, combine mayonnaise, Greek yogurt, lemon juice, lemon zest, minced garlic, chopped basil, salt, and black pepper. Mix well.
- Toss: Pour the dressing over the chicken and vegetables, mixing until well combined. Taste and adjust seasoning as necessary.
- Serve: Serve immediately with crackers, in a sandwich, or as a wrap. Alternatively, refrigerate until ready to use.
