- 1/2 cup soy sauce
- 2 tbsp honey
- 1 tbsp cornstarch, mixed with 2 tbsp water

Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chopped onion and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add chopped red and green bell peppers and broccoli florets. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Add the sliced or shredded leftover pork tenderloin to the skillet.
- In a small bowl, whisk together soy sauce and honey. Pour over the pork and vegetables.
- Bring the mixture to a simmer.
- Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens.
- Serve the leftover pork tenderloin stir-fry over cooked rice.
