Description
Transform leftover chicken breast into a delicious and easy meal. This recipe uses cooked chicken, pasta or rice, and vegetables in a creamy sauce.
Ingredients
- Cooked chicken breast: 2 cups, shredded
- Olive oil: 2 tbsp
- Garlic cloves: 2, minced
- Onion: 1 medium, chopped
- Bell pepper: 1, diced
- Cherry tomatoes: 1 cup, halved
- Cooked pasta or rice: 2 cups
- Heavy cream: 1 cup
- Parmesan cheese: ½ cup, grated
- Fresh parsley: 2 tbsp, chopped
- Salt: To taste
- Black pepper: To taste
Instructions
- Warm olive oil in a large skillet over medium heat.
- Add garlic and onion, cook until softened and fragrant.
- Stir in diced bell pepper and cherry tomatoes. Cook until tender.
- Add shredded leftover chicken breast to the skillet and mix with vegetables. Heat through.
- Pour in heavy cream and stir to create a creamy base.
- Season with salt and black pepper to taste.
- Add cooked pasta or rice to the skillet and toss to coat with the sauce.
- Sprinkle Parmesan cheese over the top and stir until melted.
- Remove from heat and garnish with chopped parsley.
- Serve hot.
Notes
- For a lighter option, use Greek yogurt or low-fat milk instead of heavy cream.
- Add chili flakes or paprika for spice, or fresh basil or oregano for Mediterranean flavor.
- You can bake the mixture in a casserole dish, topped with breadcrumbs, until golden.
