- 1 cup long grain or basmati white rice
- 2 cups brown lentils
- 4.5 cups water
- 0.5 cup olive oil
- 2 large yellow onions
- 1 teaspoon salt
- 2 teaspoons cumin
Instructions
- Rinse the rice under cold water and soak it in a bowl for at least 30 minutes.
- Heat olive oil in a large pot over medium heat and sauté sliced onions until golden brown.
- Stir in the rinsed and drained lentils with caramelized onions for about 2 minutes.
- Pour in water and bring to a boil.
- Add soaked rice, salt, and cumin to the pot, stir gently, reduce to low heat, and cover to simmer.
- Cook for about 20-25 minutes until tender and water is absorbed.
- Allow to rest for about 10 minutes before serving.
