- 1 pound ground beef (or Italian sausage)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken or beef broth
- 2 cups water
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper (to taste)
- 8 ounces lasagna noodles (broken into pieces)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (plus extra for topping)
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley (chopped, for garnish)
Instructions
- In a large pot or Dutch oven, brown the ground beef or sausage over medium heat until cooked. Drain excess fat. Add the chopped onion and minced garlic, and sauté for about 5 minutes until the onion is translucent.
- Stir in the crushed tomatoes, chicken or beef broth, and water. Add dried basil, oregano, red pepper flakes (if using), salt, and pepper. Bring the mixture to a boil.
- Add the broken lasagna noodles to the boiling mixture. Reduce heat and simmer for about 10-12 minutes, or until noodles are tender.
- While the noodles cook, combine ricotta cheese, shredded mozzarella, and grated Parmesan in a bowl. Season with salt and pepper.
- Ladle the lasagna soup into bowls. Top each serving with a spoonful of the cheese mixture. Garnish with extra mozzarella and fresh herbs. Serve hot.

- For a vegetarian lasagna soup, substitute meat with lentils or mushrooms.
- Add chopped spinach, zucchini, or bell peppers for extra vegetables.
- Adjust red pepper flakes for your preferred spice level.
