  • 12 pieces Piquillo Peppers (use roasted red peppers if unavailable)
  • 2 large Avocados (or Greek yogurt for a lower-fat option)
  • 2 tbl Lime Juice (can use lemon juice)
  • 1/4 cup Cilantro (or omit if desired)
  • 1 tbl Avocado Oil (can swap for neutral oil)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine ground lamb, egg, matzo meal, cumin, coriander, red pepper flakes, turmeric, avocado oil, salt, and pepper in a large bowl. Mix well, then form the mixture into 15 meatballs.
  3. Prepare the piquillo peppers by laying them on a baking sheet and piercing the tips to release steam during baking.
  4. Stuff each pepper with a meatball, pressing gently to fill them completely. Arrange the stuffed peppers in a single layer on the baking sheet.
  5. Bake in the preheated oven for approximately 18 minutes, or until the meatballs reach an internal temperature of 160°F (71°C).
  6. Blend together avocados, lime juice, avocado oil, cilantro, cumin, and sea salt in a food processor until smooth.
  7. Serve the stuffed piquillo peppers warm or cold, alongside the zesty avocado lime sauce.
