- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/4 cup pineapple juice (fresh or canned)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and freshly cracked black pepper, to taste
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil (for grilling)
- Fresh cilantro or parsley, chopped
- Lime wedges
- Pineapple slices (for grilling alongside chicken)
Instructions
- In a bowl, whisk together the orange juice, lime juice, pineapple juice, olive oil, honey, garlic, cumin, chili powder, and red pepper flakes. Season with salt and pepper to taste.
- Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (preferably 2–4 hours).
- Preheat your grill to medium-high heat (about 375°F–400°F). Clean and oil the grates well to prevent sticking. If using a grill pan, preheat it over medium-high heat and brush it lightly with olive oil.
- Remove the chicken from the marinade (discard the marinade) and lightly brush each piece with a bit of olive oil to prevent sticking to the grill.
- Place the chicken on the grill and cook for about 6–7 minutes per side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center. If grilling pineapple slices, place them on the grill during the last few minutes of chicken cooking, turning them once until lightly charred.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing. Garnish with fresh cilantro or parsley and serve with lime wedges and grilled pineapple slices.
