- 1 lb boneless, skinless chicken thighs (or breasts)
- 2 cups fresh spinach
- 1 cup heavy cream
- 4 cups low-sodium chicken broth
- 4 cloves garlic (minced)
- 1 medium onion (diced)
- 2 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sauté the Aromatics: Heat a large pot over medium heat. Add olive oil, diced onions, and minced garlic. Sauté until fragrant and translucent, about 5 minutes.
- Brown the Chicken: Add boneless chicken thighs to the pot. Cook until browned on both sides, approximately 4–5 minutes per side.
- Add Broth and Seasonings: Pour in low-sodium chicken broth and add Italian seasoning. Bring to a gentle boil, then reduce heat and let simmer for about 15 minutes.
- Stir in Cream and Spinach: After simmering, stir in heavy cream followed by fresh spinach. Cook until the spinach wilts down, about another 3–5 minutes.
- Check Seasoning: Taste your soup and adjust seasoning with salt or pepper as needed.
- Serve It Up: Ladle the soup into bowls and garnish with grated Parmesan cheese if desired.
