  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 4 cloves garlic (minced)
  • 1 medium onion (diced)
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics: Heat a large pot over medium heat. Add olive oil, diced onions, and minced garlic. Sauté until fragrant and translucent, about 5 minutes.
  2. Brown the Chicken: Add boneless chicken thighs to the pot. Cook until browned on both sides, approximately 4–5 minutes per side.
  3. Add Broth and Seasonings: Pour in low-sodium chicken broth and add Italian seasoning. Bring to a gentle boil, then reduce heat and let simmer for about 15 minutes.
  4. Stir in Cream and Spinach: After simmering, stir in heavy cream followed by fresh spinach. Cook until the spinach wilts down, about another 3–5 minutes.
  5. Check Seasoning: Taste your soup and adjust seasoning with salt or pepper as needed.
  6. Serve It Up: Ladle the soup into bowls and garnish with grated Parmesan cheese if desired.
