- 8 oz mushrooms (sliced)
- 4 cloves garlic (minced)
- 8 oz cream cheese (softened)
- 1 cup cheddar cheese (shredded)
- 1 cup chicken broth (low-sodium preferred)
- 2 tbsp olive oil (for sautéing)
- 1 tsp fresh thyme (chopped)
- salt (to taste)
- black pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and minced garlic, cooking until the mushrooms are tender and fragrant, about 5-7 minutes.
- Sprinkle salt and black pepper over the mushrooms. Stir in the chopped fresh thyme for an added layer of flavor, allowing the herbs to infuse for 1 minute.
- Toss in the cubed chicken breast, cooking until it turns golden brown and is no longer pink, about 7-10 minutes. Mix well to ensure every piece gets coated.
- In a separate bowl, blend softened cream cheese with chicken broth until smooth. Pour this creamy mixture over the chicken and mushrooms in the skillet.
- Fold in the shredded cheddar cheese until everything is well-combined and the cheese starts to melt into a luscious sauce.
- Transfer the mixture to a greased casserole dish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until golden and bubbly.
- Remove from the oven and let the casserole rest for 5 minutes. Top with a sprinkle of fresh thyme and extra cheddar if desired before serving.
