Instructions

  1. In a bowl, whisk together the soy sauce, mirin, sugar, sake (if using), sesame oil, minced garlic, and grated ginger until well combined.
  2. Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and let it marinate for at least 15 minutes, or refrigerate for up to 2 hours for better flavor absorption.
  3. In a large skillet or frying pan, heat a little oil over medium-high heat. Once hot, remove the chicken from the marinade, allowing the excess to drip off.
  4. Add the chicken to the skillet, cooking each side for about 5-7 minutes until the chicken is cooked through and well-browned. Use a meat thermometer to ensure the internal temperature reaches at least 165°F (75°C).
  5. While the chicken is cooking, pour the leftover marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for about 5-7 minutes until it thickens slightly.
  6. Brush the thickened sauce onto the cooked chicken, allowing it to caramelize slightly in the pan for an extra layer of flavor.
  7. Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing it into bite-sized pieces.
  8. Arrange the sliced chicken on a plate or bowl, drizzle with any remaining sauce, and garnish with sliced green onions and sesame seeds.
