- ½ cup soy sauce
- ¼ cup mirin (sweet rice wine)
- ¼ cup sugar
- 2 tablespoons sake (optional)

- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2 tablespoons green onions, sliced (for garnish)

Instructions
- In a bowl, whisk together the soy sauce, mirin, sugar, sake (if using), sesame oil, minced garlic, and grated ginger until well combined.
- Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and let it marinate for at least 15 minutes, or refrigerate for up to 2 hours for better flavor absorption.
- In a large skillet or frying pan, heat a little oil over medium-high heat. Once hot, remove the chicken from the marinade, allowing the excess to drip off.
- Add the chicken to the skillet, cooking each side for about 5-7 minutes until the chicken is cooked through and well-browned. Use a meat thermometer to ensure the internal temperature reaches at least 165°F (75°C).
- While the chicken is cooking, pour the leftover marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for about 5-7 minutes until it thickens slightly.
- Brush the thickened sauce onto the cooked chicken, allowing it to caramelize slightly in the pan for an extra layer of flavor.
- Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing it into bite-sized pieces.
- Arrange the sliced chicken on a plate or bowl, drizzle with any remaining sauce, and garnish with sliced green onions and sesame seeds.
