Description

A flavorful sourdough bread infused with jalapeños and cheddar cheese.


Ingredients

Scale
  • 100 grams starter (about 1/2 cup)
  • 300 ml water (about 1 1/4 cup)
  • 300 grams bread flour (2 1/4 cups)
  • 12 grams sea salt (2 teaspoons)
  • 4 ounces diced jalapeños, drained
  • 100 grams sharp cheddar cheese, grated (about 1 cup)

Instructions

  1. Feed your starter 3-4 hours prior to making the bread.
  2. In a bowl, mix water and starter with a dough whisk or your hands.
  3. Add bread flour to the starter mixture and combine well until it’s a shaggy dough. The dough should be sticky.
  4. Add salt and use the pincer method to combine. Cover and let rest 20-30 minutes.
  5. Complete one set of stretch and folds, then cover and let rest for 30 minutes. Complete two more rounds of stretch and folds every 30 minutes.
  6. During the final stretch and fold, sprinkle in the drained jalapeños and cheddar cheese, folding the dough one final time to incorporate. Cover and let ferment for 1 1/2 to 2 hours at room temperature.
  7. Dust counter with a little flour. Shape the dough into a boule.
  8. Dust a proofing basket with flour and place the dough top down. Cover with plastic wrap and refrigerate for 12 to 18 hours.
  9. Preheat Dutch oven at 457°F for at least 30 minutes.
  10. Remove dough from fridge, turn onto parchment paper, score, and place in hot Dutch oven. Bake for 20 minutes with the lid on, then 15-20 minutes uncovered.
  11. Remove bread from Dutch oven and rest on a cooling rack for at least 1 hour before slicing.
