Description

This Italian Sausage and Peppers recipe is a classic Italian-American dish. It features juicy sausage links, colorful bell peppers, and caramelized onions simmered in a rich tomato sauce. It’s hearty, comforting, and easy to make, perfect for weeknight dinners or family gatherings.

Ingredients

Scale
  • pounds Italian sausage links (mild, sweet, or spicy)
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 bell peppers (red, yellow, green), sliced
  • 3 cloves garlic, minced
  • 1 (14-ounce) can crushed tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausages and brown on all sides for 7–8 minutes. Remove and set aside.
  2. In the same skillet, add sliced onions and bell peppers. Cook for about 5 minutes until softened and lightly caramelized. Add garlic and sauté another minute.
  3. Stir in crushed tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Mix well.
  4. Return sausages to the pan, cover, and simmer for 15–20 minutes until everything is tender and flavorful.
  5. Sprinkle with chopped parsley and serve over pasta, rice, or on hoagie rolls for sandwiches.

Notes

  • Use a variety of peppers for color and flavor balance.
  • Browning the sausages adds depth and richness to the dish.
  • For a low-carb version, serve over cauliflower rice or zucchini noodles.
  • Add a splash of balsamic vinegar for extra tang and depth.
  • Refrigerate leftovers for up to 4 days — flavors improve overnight!
