Savory Italian Crockpot Chicken Thighs for Cozy Dinners

- 4 pieces Chicken Thighs (Bone-in, skin-on for best flavor)
- 2 tablespoons Olive Oil (For searing the chicken)
- 1 medium Onion (Chopped)
- 3 cloves Garlic (Minced)
- 28 ounces Crushed Tomatoes (Base of the sauce)
- 1 teaspoon Dried Oregano (Can use fresh)
- 1 teaspoon Dried Basil (Can use fresh)
- 1 teaspoon Dried Thyme (Can use fresh)
- to taste Salt
- to taste Pepper
- 1 tablespoon Fresh Basil (Optional, for garnish)
Instructions
- Season the chicken thighs generously with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken skin-side down for about 5 minutes until golden brown, then flip and sear the other side for 3-4 minutes. Remove from heat.
- In the same skillet, add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and sauté for another minute.
- In your crockpot, mix together crushed tomatoes, dried oregano, dried basil, and dried thyme.
- Place the well-seared chicken thighs on top of the tomato mixture in the crockpot.
- Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
- If desired, shred the chicken using two forks or serve whole for presentation.
- Just before serving, sprinkle fresh basil on top.
