    • 2 tablespoons granulated sugar
    • 24 tablespoons ice water
  • For the filling:
    • 1 cup (240g) sour cream
    • 2 large eggs
    • ⅓ cup (67g) granulated sugar
    • ¼ cup (60ml) champagne or sparkling wine
    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon zest
    • 1 ½ cups (225g) fresh strawberries, sliced
  • For serving:
    • Powdered sugar, for dusting

Instructions

  1. Make the crust: Preheat oven to 350°F (175°C). In a bowl, combine flour, sugar, and cold butter. Use a pastry cutter or fingers to mix until crumbly. Gradually add ice water, 1 tablespoon at a time, until dough forms. Shape into a disk, wrap, and chill for 30 minutes.
  2. Blind bake the crust: Roll out dough on lightly floured surface and press into a 9-inch tart pan. Line with parchment paper and fill with pie weights or dried beans. Bake for 20 minutes. Remove weights and parchment; bake 5 more minutes until lightly golden.
  3. Prepare the filling: In a bowl, whisk together sour cream, eggs, sugar, champagne, vanilla, and lemon zest until smooth. Gently fold in sliced strawberries.
  4. Final bake: Pour filling into pre-baked crust. Bake for 30–35 minutes, until the center is set but still slightly jiggly. Cool completely before serving. Dust with powdered sugar if desired.
