Description

Irresistible Salted Caramel Cheesecake Cookies combine the creamy richness of cheesecake with the delightful flavors of salted caramel, all nestled in a chewy cookie. These decadent treats are perfect for cookie lovers and a fantastic addition to any dessert table!

Ingredients

Scale
  • For the Cookie Dough:
  • 1 cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the Caramel Filling:
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 teaspoon sea salt (for sprinkling)
  • For Topping:
  • Additional caramel sauce for drizzling (optional)
  • Sea salt for garnish (optional)

Instructions

  1. Prepare the Cookie Dough: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Cream the softened butter and cream cheese together until smooth. Add granulated sugar and brown sugar, mixing until combined. Add eggs one at a time, mixing well after each. Stir in vanilla extract. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  2. Assemble the Cookies: Scoop cookie dough onto prepared baking sheets, spacing them 2 inches apart. Make a small indentation in the center of each dough ball and fill with 1 teaspoon of caramel sauce. Flatten another small piece of dough and place it over the caramel filling to seal it. Gently press down to flatten the cookie slightly.
  3. Bake the Cookies: Bake for 12-15 minutes, or until edges are lightly golden. The centers may look slightly underbaked.
  4. Cool the Cookies: Remove from oven and let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  5. Drizzle and Garnish: Once cooled, drizzle additional caramel sauce over the tops. Sprinkle with sea salt for that irresistible salty-sweet flavor.

Notes

  • Add chocolate chips or chunks for extra flavor.
  • Substitute caramel sauce with chocolate or butterscotch sauce for a different twist.
  • Incorporate chopped nuts like pecans or walnuts into the cookie dough for added texture.
  • Store leftover cookies in an airtight container at room temperature for up to 5 days.
  • Freeze cookies for longer storage, up to 3 months.
