- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 2 cups fresh spinach, chopped
- 1 tsp garlic powder
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- ¼ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp fresh lemon juice
Instructions
- Preheat oven to 375°F (190°C).
- Slice chicken breasts horizontally to create pockets.
- In a bowl, mix cream cheese, spinach, garlic powder, mozzarella, Italian seasoning, and Parmesan.
- Stuff chicken pockets with filling and secure if needed.
- Heat olive oil in a skillet and sear chicken until golden.
- Transfer to a baking dish, add chicken broth and lemon juice, and bake for 25-30 minutes until cooked through.
