- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and chop the sweet potatoes into 1-inch cubes. Toss them in olive oil, salt, and pepper.
- Spread sweet potatoes evenly on a baking sheet and roast for 25-30 minutes, flipping halfway through.
- While the sweet potatoes roast, prepare the salad base by adding spinach, red onion, toasted pecans, and feta to a large bowl.
- For the dressing, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper in a small bowl.
- Once sweet potatoes are roasted and slightly cooled, add them to the salad bowl and drizzle with dressing.
- Toss gently to combine and serve immediately.
