  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 4 cups fresh spinach
  • 1 small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ½ cup toasted pecans
  • Juice of 1 lemon
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into 1-inch cubes. Toss them in olive oil, salt, and pepper.
  3. Spread sweet potatoes evenly on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. While the sweet potatoes roast, prepare the salad base by adding spinach, red onion, toasted pecans, and feta to a large bowl.
  5. For the dressing, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper in a small bowl.
