- 5 large eggs
- 1 cup milk or half-and-half
- 1 cup shredded cheese

Instructions
- Preheat your oven to 375°F (190°C) and place your pie crust in a 9-inch pie dish. Blind bake for 10 minutes until lightly golden.
- Cook the sausage in a skillet over medium heat if not already cooked. Drain and chop into bite-sized pieces.
- In a bowl, whisk together eggs, milk or half-and-half, salt, and pepper until smooth.
- Spread the sausage and roasted red peppers evenly over the baked crust. Top with shredded cheese.
- Pour the egg mixture over the filling, making sure it’s evenly distributed.
