- 2 lbs ground chicken
- 2 large eggs, slightly beaten
- 3 cloves garlic, minced
- 3 Tbsp olive oil
- 1 cup seasoned panko crumbs
- 3/4 cup grated Parmesan cheese
- 1 tsp onion powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp paprika
- 5 Tbsp butter
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1/4–1/2 tsp red pepper flakes, to taste
- 1 cup sundried tomatoes in oil, drained and chopped
- 1/4 cup white grape juice
- 1 1/2 cups low-sodium chicken broth
Instructions
- In a bowl, combine chicken, eggs, garlic, olive oil, panko, Parmesan, onion powder, salt, pepper, and paprika. Mix until just combined.
- Shape mixture into meatballs and place on a baking sheet.
- Bake at 400°F for 20 minutes or until cooked through.
- For the sauce, melt butter in a skillet, add garlic, and sauté until fragrant.
- Stir in Italian seasoning, red pepper flakes, sundried tomatoes, grape juice, and chicken broth. Simmer for 5 minutes.
- Add meatballs to the sauce and coat well. Serve hot.
