Ingredients

  • 2 cups almond flour
  • 1/4 cup Swerve confectioners’
  • 1/4 tsp kosher salt
  • 1/2 cup melted butter
  • 1/4 cup butter
  • 2/3 cup Swerve confectioners’
  • 1/2 cup heavy cream
  • 1 tsp pure vanilla extract
  • 1/2 tsp kosher salt
  • 1 1/2 cups toasted unsweetened shredded coconut
  • 1/2 cup keto-friendly chocolate chips
  • 1 Tbsp coconut butter

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×9-inch baking dish with cooking spray.
  2. In a bowl, mix almond flour, 1/4 cup Swerve, and 1/4 tsp salt.
  3. In another bowl, combine melted butter and remaining butter. Mix in 2/3 cup Swerve, heavy cream, vanilla, and 1/2 tsp salt.
  4. Combine wet and dry mixtures until smooth. Spread into the baking dish.
  5. Bake for 20-25 minutes until set. Let cool.
  6. Top with toasted coconut, melted chocolate chips, and coconut butter. Spread evenly.
  7. Cool completely and cut into squares.
