Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced

  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • ½ cup Italian dressing
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables: dice the cherry tomatoes, cucumber, bell peppers, and red onion.
  3. In a large mixing bowl, combine the cooled pasta with all chopped vegetables and olives.
