- 1.5 lbs beef sirloin, sliced thinly against the grain
- 1 cup fresh Thai basil leaves (plus extra for serving)
- 4 cloves garlic, minced
- 1/3 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1–2 tbsp chili paste (adjust to taste)
- 1 sweet onion, diced
- 2 bell peppers, sliced (any color)
- Jasmine rice or noodles, for serving
Instructions
- Slice the beef sirloin into thin strips against the grain.
- In a medium bowl, whisk together soy sauce, brown sugar, chili paste, and minced garlic.
- Layer sliced beef at the bottom of the crockpot. Top with onions and bell peppers.
- Pour the sauce mixture evenly over the beef and vegetables.
- Cover and cook on low for 6–8 hours or high for 3–4 hours, until beef is tender.
- About 30 minutes before serving, stir in the fresh basil leaves to wilt and release their flavor.
- Serve hot over jasmine rice or noodles. Garnish with extra basil if desired.
