- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/4 cup fresh lime juice (about 2 limes)
- 1 cup full-fat coconut milk
- 3 cloves garlic, minced
- 2 tbsp honey or maple syrup
- 1 tsp chili flakes (adjust to taste)
- 1/4 cup fresh cilantro, chopped
Instructions
- Trim excess fat from chicken breasts and pat dry.
- In a bowl, mix lime juice, coconut milk, garlic, honey or maple syrup, and chili flakes.
- Marinate the chicken in the mixture for at least 30 minutes.
- Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve it) and cook until golden brown on both sides (6-7 minutes each side).
- Pour reserved marinade into the skillet and simmer for about 5 minutes until thickened. Garnish with cilantro before serving.
