- 4 ripe tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
- 1 baguette, sliced
- 1 tablespoon olive oil (for toasting)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the baguette slices on a baking sheet and brush lightly with olive oil.
- Toast in the oven for 5-7 minutes until golden and crisp.
- In a bowl, mix diced tomatoes, basil, minced garlic, olive oil, and balsamic vinegar.
- Season with salt and pepper to taste.
- Spoon the tomato mixture onto the toasted bread slices.
- Serve immediately.
