- 2–3 pounds beef chuck roast, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 1 1/2 cups tomato sauce
- 2 bell peppers, sliced
- 2 bay leaves
- 1/4 cup soy sauce
- 1 tsp whole peppercorns
- 2 cups water or beef broth
- Optional: potatoes, carrots, Worcestershire sauce, vinegar, chili flakes
Instructions
- Prepare all ingredients: chop onions, mince garlic, and slice bell peppers.
- Heat oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides (about 5–7 minutes).
- Add onions and garlic. Sauté until translucent and fragrant.
- Stir in tomato sauce, soy sauce, and broth or water. Mix to combine.
- Add bell peppers and bay leaves. Bring to a simmer, cover, and cook for about 1.5 hours until beef is tender.
- Adjust seasoning with salt and pepper. Remove bay leaves before serving.
