- 1 pound boneless, skinless chicken breast
- 1 cup cooked rice (white, brown, or cauliflower rice all work well)
- 1 cup assorted vegetables (broccoli, bell peppers, carrots, or similar)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- ½ cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon freshly squeezed lime juice
Instructions
- In a bowl, combine the mayonnaise, sriracha, honey, garlic powder, and lime juice. Stir until smooth and creamy. Set it aside so the flavors can blend while you cook the rest of the dish.
- Slice the chicken breast into small, evenly sized chunks. Season well with salt and pepper, making sure all sides are coated.
- Heat olive oil in a large pan over medium-high heat. Once hot, add the chicken in a single layer. Cook, turning occasionally, until the pieces are browned and fully cooked through, about 6–8 minutes. The chicken should reach an internal temperature of 165°F.
- While the chicken is cooking, lightly steam or sauté the vegetables until they’re just tender but still slightly crisp. This usually takes around 4–5 minutes.
- Remove the chicken from the heat and toss it with about half of the bang bang sauce while it’s still hot. Spoon the rice into serving bowls, then top with the sauced chicken and vegetables. Finish with a drizzle of the remaining sauce and serve right away.
