- 3–4 ripe bananas (about 1 ½ cups mashed)
- 1 ½ cups cassava flour
- 2 large eggs (room temperature)
- ½ cup honey or maple syrup
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Whisk in the eggs and honey or maple syrup until combined.
- In another bowl, whisk together cassava flour, baking soda, salt, and cinnamon (if using).
- Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes until golden brown and a toothpick inserted comes out clean.
