- 2 medium ripe bananas, mashed
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon (optional)
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) light brown sugar
- ¼ cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- 1 cup (170g) semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, mash the ripe bananas with a fork until mostly smooth.
- In a large bowl, beat the softened butter with light brown sugar and granulated sugar on medium speed until fluffy and lighter in color, about 2 minutes.
- Beat in the egg and vanilla extract until combined, then mix in the mashed bananas.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
- Fold in the semi-sweet chocolate chips evenly.
- Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet about 2 inches apart.
- Bake for 12-15 minutes until edges are golden and centers look set but soft, with tiny cracks on top.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
