Ingredients

  • 2 medium ripe bananas, mashed
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) light brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, mash the ripe bananas with a fork until mostly smooth.
  3. In a large bowl, beat the softened butter with light brown sugar and granulated sugar on medium speed until fluffy and lighter in color, about 2 minutes.
  4. Beat in the egg and vanilla extract until combined, then mix in the mashed bananas.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  7. Fold in the semi-sweet chocolate chips evenly.
  8. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet about 2 inches apart.
  9. Bake for 12-15 minutes until edges are golden and centers look set but soft, with tiny cracks on top.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
