  • 1 cup old fashioned oats
  • 1/2 cup ground flax seeds
  • 2 tbsp honey
  • 1/2 cup mix in’s (see variations below)
  • 1/2 cup chocolate chips (for Double Chocolate)
  • 2 tbsp cocoa powder (for Double Chocolate)
  • 1/4 cup white chocolate chips (for White Chocolate Cranberry)
  • 1/4 cup dried cranberries (for White Chocolate Cranberry)
  • 1/2 lemon zested and juiced (for Lemon)
  • 2 tsp poppy seeds (for Lemon)
  • 1/4 cup mini M & M’s (for Monster Cookie)
  • 1/4 cup mini chocolate chips (for Monster Cookie)
  • 1/4 cup peanuts (for Trail Mix)
  • 1/4 cup raisins (for Trail Mix)
  • 1/4 cup almonds, chopped (for Almond Joy)
  • 1/4 cup unsweetened shredded coconut (for Almond Joy)
  • 1/4 cup chocolate chips (for Almond Joy)
  • 1/4 cup sprinkles (for Cake Batter)
  • 2 tbsp vanilla protein powder (for Cake Batter)

Instructions

  1. Combine 2/3 cup creamy peanut butter, 1 cup old fashioned oats, 1/2 cup ground flax seeds, and 2 tablespoons honey in a large mixing bowl. Stir thoroughly until the mixture becomes uniform and begins to stick together when pressed.
  2. Add 1/2 cup of your chosen mix-ins (chocolate chips, dried fruit, nuts, etc.) based on which flavor variation you’re making. I find that mixing with clean hands at this point creates the perfect texture by warming the peanut butter slightly.
  3. Let the mixture rest for 5 minutes, which allows the oats to absorb some moisture and makes the dough easier to shape without crumbling.
  4. Scoop about 1-2 tablespoons of the mixture and roll between your palms to form compact balls. The warmth from your hands helps bind the ingredients together for the perfect texture.
  5. Place the formed energy bites on a parchment-lined tray or plate, leaving a small space between each one to prevent sticking.
  6. Refrigerate the energy bites for at least 30 minutes to firm up. This chilling step is crucial for the perfect texture—they’ll be much easier to handle and have a more satisfying bite.
  7. Transfer the chilled energy bites to an airtight container, separating layers with parchment paper if stacking. Store in the refrigerator for up to one week, though I rarely have any last that long!
