- 1 ½ cups graham cracker crumbs
- ⅓ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 3 large eggs (room temperature)
- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a springform pan.
- In another bowl, beat softened cream cheese with granulated and brown sugars until smooth. Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract and ground cinnamon until combined. Pour cheesecake filling over the crust and smooth the top.
- Bake for about 50-60 minutes until slightly jiggly in the center. Turn off the oven and cool for an hour with the door slightly open before refrigerating for at least four hours.
