  • 1 onion, minced
  • 1 tablespoon garlic, minced
  • 1 can (15 oz) tomato sauce
  • 3 cups heavy cream
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garam masala
  • pounds skinless, boneless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons tandoori masala

Instructions

  1. Preheat the oven to 375°F (190°C) and gather all ingredients.
  2. Melt 2 tablespoons butter in a skillet over medium heat. Add onion and garlic and cook slowly, stirring often, until deeply caramelized (about 15 minutes).
  3. In a saucepan, combine tomato sauce, heavy cream, remaining butter, salt, cayenne pepper, and garam masala. Bring to a gentle simmer.
  4. Reduce heat, cover, and simmer for 30 minutes, stirring occasionally. Stir in the caramelized onions.
  5. Toss chicken with vegetable oil and coat evenly with tandoori masala. Spread in a single layer on a baking sheet.
  6. Bake chicken for 12 minutes, or until just cooked through.
  7. Add baked chicken to the sauce and simmer together for 5 minutes.
  8. Remove from heat and serve warm.
