- 1 cup butter, divided
- 1 onion, minced
- 1 tablespoon garlic, minced
- 1 can (15 oz) tomato sauce
- 3 cups heavy cream
- 2 teaspoons salt
- 1 teaspoon cayenne pepper
- 1 teaspoon garam masala
- 1½ pounds skinless, boneless chicken breast, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 2 tablespoons tandoori masala
Instructions
- Preheat the oven to 375°F (190°C) and gather all ingredients.
- Melt 2 tablespoons butter in a skillet over medium heat. Add onion and garlic and cook slowly, stirring often, until deeply caramelized (about 15 minutes).
- In a saucepan, combine tomato sauce, heavy cream, remaining butter, salt, cayenne pepper, and garam masala. Bring to a gentle simmer.
- Reduce heat, cover, and simmer for 30 minutes, stirring occasionally. Stir in the caramelized onions.
- Toss chicken with vegetable oil and coat evenly with tandoori masala. Spread in a single layer on a baking sheet.
- Bake chicken for 12 minutes, or until just cooked through.
- Add baked chicken to the sauce and simmer together for 5 minutes.
- Remove from heat and serve warm.
