Instructions

  1. Season chicken breasts with salt and pepper. Dredge each breast in flour to coat evenly.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté mushrooms for 2-3 minutes. Add Marsala wine and chicken broth, scraping up any browned bits from the pan. Simmer for 5 minutes to reduce the sauce.
  4. Return chicken to the skillet, spoon some sauce over the top, and simmer for 5 minutes to let the flavors meld together.
  5. Garnish with fresh parsley and serve with your favorite sides, like garlic mashed potatoes or roasted vegetables.
