Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 8 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 cup egg noodles
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and grated ginger, and cook for 1 minute more until fragrant.
  4. Pour in chicken broth. Add the browned chicken back to the pot.
  5. Stir in thyme and black pepper. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes, or until chicken is cooked through.
  6. Add egg noodles and cook according to package directions until tender.
  7. Season with salt to taste.
  8. Ladle the immune-boosting chicken soup into bowls. Garnish with fresh parsley.

  • For a richer broth, use bone-in chicken pieces and simmer for longer.
