  • 1/4 cup honey
  • 1 teaspoon red pepper flakes
  • 1 teaspoon apple cider vinegar (optional)

Instructions

  1. In a small saucepan over low heat, combine the honey, red pepper flakes, and apple cider vinegar (if using).
  2. Stir gently until warmed through and well combined. Remove from heat and set aside.
  3. In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  4. Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and pepper.
  5. Cook the eggs to your desired doneness. For sunny-side-up eggs, cook for about 2-3 minutes until the whites are set but the yolks are still runny. For over-easy, gently flip the eggs and cook for an additional 1-2 minutes.
  6. During the last minute of cooking, place the fresh mozzarella slices on top of the eggs. Cover the skillet with a lid to help the cheese melt.
  7. Once the mozzarella is melted and the eggs are cooked to your liking, carefully transfer the eggs to a plate.
  8. Drizzle the warm hot honey over the eggs, allowing it to soak into the cheese and eggs.
  9. Garnish with fresh herbs if desired, and serve immediately.
