- 4 large eggs
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup fresh mozzarella cheese (sliced or torn)
- Fresh herbs (basil or parsley, optional)
- 1/4 cup honey
- 1 teaspoon red pepper flakes
- 1 teaspoon apple cider vinegar (optional)
Instructions
- In a small saucepan over low heat, combine the honey, red pepper flakes, and apple cider vinegar (if using).
- Stir gently until warmed through and well combined. Remove from heat and set aside.
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
- Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and pepper.
- Cook the eggs to your desired doneness. For sunny-side-up eggs, cook for about 2-3 minutes until the whites are set but the yolks are still runny. For over-easy, gently flip the eggs and cook for an additional 1-2 minutes.
- During the last minute of cooking, place the fresh mozzarella slices on top of the eggs. Cover the skillet with a lid to help the cheese melt.
- Once the mozzarella is melted and the eggs are cooked to your liking, carefully transfer the eggs to a plate.
- Drizzle the warm hot honey over the eggs, allowing it to soak into the cheese and eggs.
- Garnish with fresh herbs if desired, and serve immediately.
