Description
Hot honey chicken bowls combine the irresistible flavors of tender chicken thighs, crispy roasted sweet potatoes, and tender broccoli, all drizzled with a sweet and spicy hot honey sauce. This balanced meal is perfect for meal prep or a quick weeknight dinner.

- 3 sweet potatoes
- 8 boneless skinless chicken thighs
- 3–4 broccoli crowns
- 8 slices bacon
- 2 tsp salt
- ½ tsp black pepper
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp brown sugar
- 2 tbsp olive oil
- Hot honey (or regular honey)
- Red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F (200°C). Line two rimmed baking sheets with parchment paper or aluminum foil.
- Peel and chop the sweet potatoes into cubes, placing them on one sheet pan.
- Pat the chicken thighs dry with a paper towel and arrange them on the other sheet pan. Chop the bacon and scatter it around the chicken.
- Chop the broccoli into florets and set aside.
- Drizzle olive oil over the sweet potatoes, chicken, and bacon. Use your hands to toss them until evenly coated.
- Mix the salt, pepper, smoked paprika, garlic powder, onion powder, and brown sugar together, then sprinkle the seasoning over the chicken and sweet potatoes. Toss again to coat.
- Place the sweet potatoes and chicken in the oven and roast for 20 minutes. After 20 minutes, toss the sweet potatoes and add the broccoli to the pan.
- Continue roasting for another 20-25 minutes, or until the chicken is cooked through and the veggies are tender.
- Assemble the bowls by dividing the chicken, sweet potatoes, and broccoli. Drizzle with hot honey and add red pepper flakes if desired.
