  • 1 cup apple juice
  • 3 tablespoons whisky (optional)
  • 0.25 cups vegetable oil
  • 4 eggs (beaten)

Instructions

  1. Preheat your oven to 350°F (175°C). Dust your cake pan with 1 tablespoon of all-purpose flour to prevent sticking.
  2. In a large mixing bowl, combine the 2½ cups all-purpose flour, 1 cup whole wheat flour, 2 oz. ground walnuts, ½ cup brown sugar, 1 teaspoon baking powder, 1 tablespoon baking soda, and the spices: 2 teaspoons ground ginger, 2 teaspoons cinnamon, ½ teaspoon ground cloves, ½ teaspoon ground nutmeg, and ½ teaspoon ground mace. Stir until well mixed.
  3. In a separate bowl, whisk together the 1¼ cups honey, 1 cup apple juice, 3 tablespoons whisky (if using), ¼ cup vegetable oil, and 4 beaten eggs until smooth and well combined.
  4. Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined.
  5. Transfer the batter into your prepared cake pan, smoothing the top with a spatula to ensure even baking.
  6. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
