- 0.25 cups vegetable oil
- 4 eggs (beaten)
Instructions
- Preheat your oven to 350°F (175°C). Dust your cake pan with 1 tablespoon of all-purpose flour to prevent sticking.
- In a large mixing bowl, combine the 2½ cups all-purpose flour, 1 cup whole wheat flour, 2 oz. ground walnuts, ½ cup brown sugar, 1 teaspoon baking powder, 1 tablespoon baking soda, and the spices: 2 teaspoons ground ginger, 2 teaspoons cinnamon, ½ teaspoon ground cloves, ½ teaspoon ground nutmeg, and ½ teaspoon ground mace. Stir until well mixed.
- In a separate bowl, whisk together the 1¼ cups honey, 1 cup apple juice, 3 tablespoons whisky (if using), ¼ cup vegetable oil, and 4 beaten eggs until smooth and well combined.
- Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined.
- Transfer the batter into your prepared cake pan, smoothing the top with a spatula to ensure even baking.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
