This Instant Pot Honey Mustard Chicken Stew is a comforting and flavorful one-pot meal featuring tender chicken thighs simmered in a tangy honey mustard sauce with baby potatoes, carrots, and celery.

- 2 lb chicken thighs, bone-in, and skin-on
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 2 tablespoons vegetable oil
- 1 cup chicken broth, low sodium
- 3 tablespoons whole grain mustard
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic, minced
- 12–14 baby potatoes, cut into halves
- 1 cup baby carrots, cut into halves
- ½ cup celery, sliced
- Chopped parsley, to garnish
Instructions
- Pat the chicken thighs dry and season them evenly with salt and ground pepper. Set aside to allow the seasoning to penetrate.
- Turn the Instant Pot to the ‘SAUTE’ mode and heat the vegetable oil. Place the chicken thighs skin side down and sear until the skin is slightly browned and crisp, then flip to brown the other side.
- Pour in the chicken broth and use a spoon to scrape up any browned bits stuck to the bottom of the pot. Stir in the whole grain mustard, honey, Dijon mustard, and minced garlic to create a rich and tangy sauce. Turn off the ‘SAUTE’ mode.
- Layer the halved baby potatoes, baby carrots, and sliced celery over the chicken and sauce. Close the Instant Pot lid securely and set the valve to the ‘sealing’ position.
- Set the Instant Pot to pressure cook on ‘HIGH’ for 8 minutes. Perform a ‘QUICK RELEASE’ to release the pressure immediately.
- Carefully open the lid, garnish the stew with freshly chopped parsley, and serve while warm.
Notes
- For a thicker sauce, optionally stir in a cornstarch slurry and simmer briefly after cooking.
