- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 3 cups cauliflower rice
- 1 tablespoon olive oil (for cauliflower)
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a bowl, whisk together honey, lime juice, garlic, paprika, olive oil, salt, and pepper.
- Add shrimp and toss to coat evenly, letting it marinate briefly.
- Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and cooked through.
- Remove shrimp from heat and set aside.
- In another pan, heat olive oil and sauté cauliflower rice for 5–6 minutes until tender. Season with salt and pepper.
- In a separate bowl, combine diced avocado, cherry tomatoes, red onion, and cilantro. Toss gently.
- To assemble, place a layer of cauliflower rice on a plate.
- Top with the avocado mixture, then add the cooked shrimp on top.
- Drizzle any remaining sauce over the stack and serve immediately.
