Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 3 cups cauliflower rice
  • 1 tablespoon olive oil (for cauliflower)
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a bowl, whisk together honey, lime juice, garlic, paprika, olive oil, salt, and pepper.
  2. Add shrimp and toss to coat evenly, letting it marinate briefly.
  3. Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and cooked through.
  4. Remove shrimp from heat and set aside.
  5. In another pan, heat olive oil and sauté cauliflower rice for 5–6 minutes until tender. Season with salt and pepper.
  6. In a separate bowl, combine diced avocado, cherry tomatoes, red onion, and cilantro. Toss gently.
  7. To assemble, place a layer of cauliflower rice on a plate.
  8. Top with the avocado mixture, then add the cooked shrimp on top.
  9. Drizzle any remaining sauce over the stack and serve immediately.
