- 1 ripe mango (diced)
- 1/4 red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1 jalapeño (seeded and minced, optional)

Instructions
- In a bowl, whisk together honey, lime juice, olive oil, minced garlic, cumin, salt, and pepper. Add chicken breasts and coat them evenly. Let marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
- In a separate bowl, combine diced mango, red onion, cilantro, jalapeño (if using), and a pinch of salt. Toss gently to mix all ingredients and set aside to let the flavors meld.
- Preheat your grill or skillet over medium-high heat. Remove the chicken breasts from the marinade, allowing excess marinade to drip off. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the heat and let it rest for 5 minutes before slicing.
- Slice the chicken and serve it topped with the fresh mango salsa. Garnish with lime wedges on the side.
