  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 cup diced mango
  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 cup red bell pepper, diced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat and cook diced chicken until browned and fully cooked, about 6–8 minutes.
  2. Season the chicken with chili powder, cumin, salt, and black pepper, stirring to coat evenly.
  3. In a small bowl, whisk together honey, lime juice, and lime zest, then pour over the chicken.
  4. Cook for 2–3 minutes until the sauce thickens and coats the chicken with a glossy glaze.
  5. In another bowl, combine diced mango, black beans, red bell pepper, and chopped cilantro.
  6. To assemble, add a layer of rice to a plate or mold, then top with the mango mixture followed by the honey lime chicken.
  7. Gently press to stack or serve layered in a bowl as desired.
