- 4 pieces chicken breasts (Boneless and skinless)
- 1/4 cup honey (For the glaze)
- 2 tablespoons soy sauce (For the glaze)
- Salt and pepper to taste (For seasoning)
- 1 tablespoon olive oil (For searing)
- 1 cup cooked rice (Any type of cooked rice)
- 1/4 cup fresh coriander, chopped (For flavor and garnish)
- 1 piece avocado, sliced (For serving)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine honey and soy sauce.
- Season the chicken breasts with salt and pepper. Brush the honey mixture over them generously.
- In a skillet, heat olive oil over medium heat. Sear the chicken for 3-4 minutes on each side until they are golden brown.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes until fully cooked.
- In a separate bowl, mix the cooked rice with chopped coriander and season with a little salt.
- To serve, stack the chicken on a plate with avocado slices laid on top of the coriander rice.
