Ingredients

  • 3 cups Sweet Potatoes (Firm, smooth-skinned)
  • 4 medium Apples (Gala or Fuji)
  • 1/2 cup Honey (Can substitute with agave nectar)
  • 2 tablespoons Butter (Unsalted)
  • 1 teaspoon Cinnamon (Can substitute with nutmeg)
  • 1 teaspoon Vanilla Extract (Optional)
  • 1/2 cup Chopped Toasted Pecans (Optional, can substitute with walnuts)
  • 1/4 cup Chopped Toasted Pecans (Optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Place whole, unpeeled sweet potatoes on a baking sheet and bake for about 40-45 minutes, until soft.
  3. While the sweet potatoes bake, wash, peel, slice, and core your apples.
  4. Once cooled, peel and slice the sweet potatoes into 1/2-inch thick rounds.
  5. Layer sweet potato and apple slices in a baking dish.
  6. In a saucepan, combine honey, butter, cinnamon, and vanilla extract. Heat until melted.
  7. Toast chopped pecans for about 5 minutes until fragrant.
  8. Pour the honey mixture over the layered ingredients and sprinkle toasted pecans on top.
  9. Bake for 15-20 minutes at 350°F.
  10. Serve warm and enjoy!
