Sweet and Simple Honey Glazed Apple & Sweet Potato Casserole

- 3 cups Sweet Potatoes (Firm, smooth-skinned)
- 4 medium Apples (Gala or Fuji)
- 1/2 cup Honey (Can substitute with agave nectar)
- 2 tablespoons Butter (Unsalted)
- 1 teaspoon Cinnamon (Can substitute with nutmeg)
- 1 teaspoon Vanilla Extract (Optional)
- 1/2 cup Chopped Toasted Pecans (Optional, can substitute with walnuts)
- 1/4 cup Chopped Toasted Pecans (Optional)
Instructions
- Preheat your oven to 375°F.
- Place whole, unpeeled sweet potatoes on a baking sheet and bake for about 40-45 minutes, until soft.
- While the sweet potatoes bake, wash, peel, slice, and core your apples.
- Once cooled, peel and slice the sweet potatoes into 1/2-inch thick rounds.
- Layer sweet potato and apple slices in a baking dish.
- In a saucepan, combine honey, butter, cinnamon, and vanilla extract. Heat until melted.
- Toast chopped pecans for about 5 minutes until fragrant.
- Pour the honey mixture over the layered ingredients and sprinkle toasted pecans on top.
- Bake for 15-20 minutes at 350°F.
- Serve warm and enjoy!
